Ground Beef Gnocchi

Ingredients

  • 1 lb lean ground beef
  • 1 large onion diced
  • 3 cloves garlic, minced
  • 1/4 tsp Italian seasoning
  • 1 (14 oz) can diced tomatoes with juices
  • 1/3 cup chicken or beef broth
  • 3/4 cup heavy whipping cream
  • 1 lb uncooked potato gnocchi
  • 1/2 cup freshly grated parmesan cheese
  • salt and pepper to taste

Directions

  1. Brown ground beef and onion in a skillet over medium high heat. Drain grease.
  2. Stir in garlic and Italian seasoning.
  3. Add the diced tomatoes, chicken broth, cream and gnocchi to the pan. Give it a stir. Once the sauce starts to bubble, cover the pan an d reduce heat to medium. Cook for 5 minutes.
  4. Uncover the pan, stir and let it cook for another few minutes or until the gnocchi has cooked through and is soft and the sauce has thickened to your liking.
  5. Stir in the parmesan cheese and salt and pepper.
  6. Serve and enjoy!
