Ingredients

  • 2 lbs lean ground beef
  • 1 large onion diced
  • 4 cloves garlic, minced
  • 3 cups water
  • 1 T beef base or bouillon
  • 2 (15 oz cans) tomato sauce
  • 2 (15 oz cans) petite diced tomatoes
  • 3 bay leaves
  • 3 T soy sauce
  • 1 T Italian Seasoning
  • salt and pepper to taste
  • 2 tsp paprika
  • 2 cups elbow macaroni noodles, uncooked
  • 1 cup cheddar cheese, shredded
  • Parsley, fresh or dried to sprinkle on top

Directions

  1. Brown beef in a large stockpot or skillet. Remove from pan and drain. Leave about 1-2 tablespoons grease in the pan.
  2. Add diced onion and garlic to pan and cook for 5 minutes over medium heat or until tender.
  3. Return beef to pot. Add water, beef base, tomatoes, tomato sauce, soy sauce, bay leaves, salt and pepper, Italian seasoning and paprika. Stir together.
  4. Bring to a boil, cover, reduce heat to low and let simmer for 20 minutes.
  5. Stir in noodles, cover and simmer 15 – 20 minutes or until pasta is al dente. Stir occasionally to prevent noodles from sticking.
  6. Just before serving, stir in cheese. Serve garnished with parsley.
