Aunt Esther’s Carrot Cake



Everything Bagel Quiche

Ingredients

  • CAKE
  • 2 cups self rising flour
  • 2 cups sugar
  • 2 T Cinnamon
  • 4 eggs
  • 1 cup Wesson Oil (or Olive Oil)
  • 3 Cup carrots, shredded
  • 1/2 cup pecans, chopped
  • FROSTING
  • 1 8 oz Cream Cheese
  • 1 stick butter, softened
  • 3 – 4 cups confectioner sugar
  • 1 T Vanilla
  • 1/2 cup pecans, chopped

Directions

  1. Heat oven to 300.
  2. Combine flour sugar, cinnamon in large bowl. Whisk ingredients together and set aside.
  3. In a second smaller bowl, combine 4 eggs and 1 cup oil. Whisk together and add to large bowl with dry ingredients. Combine.
  4. Add carrots and pecans. Combine until all ingredients are mixed together.
  5. Pour cake mix into two greased and floured pans (or spray with oil spray that also has flour). Bake for 40 minutes (or until tester comes out clean). Cool Cake Layers
  6. Mix frosting ingredients together. Frost both cake layers and enjoy!
