Chicken Fried Steak and gravy

Ingredients

  • 3 lb cube steak
  • 1 1/2 cup whole milk
  • 2 large eggs
  • 2 tsp seasoned salt
  • Salt and pepper
  • 3/4 tsp paprika
  • 1/4 tsp cayenne pepper
  • Oil for frying

  • 1/3 cup all purpose flour
  • salt, pepper
  • 2 large eggs
  • 1 cup milk
  • Salt and pepper
  • 1/2 can of evaporated milk (or more if needed)

Directions

  1. Put oil of your choosing into a large skillet and heat to medium high heat. Combine milk and eggs in a bowl and mix until combined. Combine flour, seasoned salt, salt and pepper, paprika and cayenne pepper in a separate bowl. Dredge cube steak in flour then in egg mixture and then in flour again. Lay aside until oil is heated while you dredge all pieces.
  2. When oil is hot, place steaks into skillet. Cook until steak is browned (approximately 5 minutes) and flip to other side to cook another 5 minutes. Remove from skillet and pour off oil (reserving oil for gravy) and scrape everything off the bottom of skillet to prepare for making white gravy.
  3. For gravy, add some of your oil back to skillet. With eye on medium high heat, add 1/3 cup of flour slowly, stirring constantly. Let cook for 1-2 minutes before adding milk, stirring constantly for 2 – 3 minutes.
