Everything Bagel Quiche

Ingredients

  • 1 Deep Dish crust (rolled crust or frozen crust or make your own)
  • 2 T Everything Bagel Seasoning
  • 4 oz cream cheese, softened
  • 4 eggs
  • 1 cup half and half
  • Salt and pepper to taste
  • 8 slices fully cooked bacon, coarsely chopped (about 2/3 cup)
  • 1/2 cup chopped plum (Roma) tomato (1 medium)
  • 1/4 cup sliced green onions
  • 1 cup coarsely chopped spinach
  • 1 1/2 cups shredded cheddar cheese

Directions

  1. Heat oven to 375.
  2. Unroll the rolled pie crust and sprinkle 1 side with Everything Bagel Seasoning. With rolling pin, roll seasoning into crust. Place pie crust seasoning side up in ungreased 9″ pie plate. Do not prick crust. Bake 10 minutes. (If crust puffs up in center after baking, gently push down with bottom a a metal measuring cup. (If using a frozen crust, pour seasoning over crust and using fingers, mash is slightly into the crust.)
  3. In large bowl, beat cream cheese with electric mixer on medium speed until smooth. Beat in eggs and half and half until well blended. Set aside.
  4. Layer bacon, tomato, green onions, spinach and cheddar cheese in pie crust. Pour egg mixture evenly over cheese
  5. Bake for 30 – 35 minutes or until knife inserted in center and comes out clean. Let stand 10 minutes before serving. Refrigerate leftovers.
  6. Serve and enjoy!
