
Jamaican Jerk Chicken Salad
A taste of the Caribbean
Ingredients
- 5 Slices of Bacon, Cooked and Chopped
- 4 Chicken Breasts
- 1 T Jamaican Jerk Seasoning
- 1 T Olive Oil
- 2 Heads Romaine Lettuce. Add Other Types of Lettuce if You Want.
- 1 Can Black Beans, Drained and Rinsed
- 1/2 Red Bell Pepper, Chopped
- Grape Tomatoes, Sliced (Optional)
- 1 Avocado, Chopped (Optional)
- 4 Green Onions, Chopped
- Salt, Pepper, and Seasoning to Taste
- 6 Slices Pineapple, Cooked on Grill, Chopped
Directions
- Add chicken, seasoning and olive oil to bowl. Mix well and cook on grill for approximately 5 minutes or until internal temperature reaches 165.
- Add lettuce to dish and top with all ingredients finishing with chicken.
- Enjoy!
Add A Pineapple Dressing
Ingredients
- 1/3 Cup of Mayonnaise
- 2 T Pineapple
- Juice from 2 Limes
Directions
- Mix and serve with salad!
