Ingredients
- 1 lb. ground beef or shredded chicken
- 1 bag tortilla chips
- 3 cups cheddar cheese (grated)
- 28 oz. can red enchilada sauce
- 4 oz. can diced green chiles (drained)
- 1 tsp. ground cumin
- 1/2 cup salsa for topping
- Sour cream for topping
Directions
Preheat oven to 350 degrees. Brown your ground beef and drain fat. Add to a large mixing bowl. Add diced green chilies, enchilada sauce and cumin and mix completely. Break up the tortilla chips in a bag and add to the mixing bowl. Add one cup of the grated cheddar cheese, reserving the rest for topping. Mix well. Spray your baking dish with non-stick spray then pour the mixture into baking dish. Sprinkle the rest of the cheese on top. Bake at 350 for about 50 minutes covered with foil.
