Mamaw's Coconut Fruitcake
Ingredients
- 2 cups all purpose flour
- 1 tsp baking powder
- 1 tsp salt
- 1 pound chopped fruitcake mix
- 1 1/2 cups flaked coconut
- 1 cup golden raisins
- 1 cup chopped nuts
- 1/2 cup butter or margarine
- 1 cup sugar
- 3 eggs, beaten
- 1 tsp lemon extract
- 1/2 cup orange juice
- Additional candied fruits or nuts (optional)
Directions
- In large bowl, combine flour, baking powder and salt.
- Add fruitcake mix, coconut, raisins and nuts to large bowl. Mix well.
- In a mixing bowl, cream butter and sugar.
- Add eggs and lemon extract to sugar mixture. Mix well.
- Stir the flour mixture into the butter sugar mixture, alternating with orange juice.
- Pack into a greased 10″ tube pan lined with waxed paper (or a sprayed fluted pan).
- Bake at 250 for 2 1/2 hours or or until cake tests done.
- Cool for 10 minutes.
- Remove cake from pan onto a cake plate. Cool completely.
- Garnish with candied fruit or nuts if desired.
