Mamaw's Coconut Fruitcake

Ingredients

  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 pound chopped fruitcake mix
  • 1 1/2 cups flaked coconut
  • 1 cup golden raisins
  • 1 cup chopped nuts
  • 1/2 cup butter or margarine
  • 1 cup sugar
  • 3 eggs, beaten
  • 1 tsp lemon extract
  • 1/2 cup orange juice
  • Additional candied fruits or nuts (optional)

Directions

  1. In large bowl, combine flour, baking powder and salt.
  2. Add fruitcake mix, coconut, raisins and nuts to large bowl. Mix well.
  3. In a mixing bowl, cream butter and sugar.
  4. Add eggs and lemon extract to sugar mixture. Mix well.
  5. Stir the flour mixture into the butter sugar mixture, alternating with orange juice.
  6. Pack into a greased 10″ tube pan lined with waxed paper (or a sprayed fluted pan).
  7. Bake at 250 for 2 1/2 hours or or until cake tests done.
  8. Cool for 10 minutes.
  9. Remove cake from pan onto a cake plate. Cool completely.
  10. Garnish with candied fruit or nuts if desired.
