Chili Cornbread Bake

Ingredients

  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 1 lb 90% lean ground beef
  • 1 16 oz can chili beans, undrained
  • 1 cup chunky salsa
  • 1 T Tex Mex or Taco Seasoning
  • 1 box Jiffy corn muffin mix
  • 1 egg
  • 1 8 oz sour cream
  • 1 cup shredded cheddar cheese
  • 1 small tomato, diced (Optional)

Directions

  1. Cook beef in skillet with onion and pepper. Cook until beef is no longer pink.
  2. Add seasoning, beans, salsa and simmer for 6 minutes. Put into a microwaveable casserole dish.
  3. In a bowl, combine Jiffy corn muffin mix, sour cream and egg until combined.
  4. Pour sour cream mixture over meat mixture. Spread to edges of casserole dish. Place in microwave oven.
  5. Cook in microwave for 10 minutes.
  6. Remove from microwave, check cornbread for doneness. If cornbread is done, pour cheese over top and put lid on until cheese has melted.
  7. Pour diced tomatoes over top and ENJOY!
  8. If you would rather cook in oven, place in oven instead of microwave and use cook times on the box of cornbread mix.
